Fall Veggie and Beef Stew


Nathan and I have been craving a hearty stew, so tonight we made use of our veggies and some beef from the co-op. We made the recipe up as we went. The result was so tasty I wanted to share.

Saute for about 3 minutes:
1 tbsp olive oil
1 lb of organic cube steak (you could substitute with tofu)
half an onion, chopped
1 stalk of celery, chopped

After the meat is slightly brown add:
3 cups of beef broth
1 can of lentils
4 soup cans of water
1 shredded carrot
1 cup of frozen corn
4 potatoes, quartered
1 cup of quinoa, rinse and add
5 tbl of salt
2 bay leaves
pinch of paprika
pinch of thyme

In food processor puree then add to stew:
2 cups of shredded red cabbage
3 cloves of garlic
1 large dried red chili pepper
1 tsp of jalapeno

Let simmer until the potatoes are soft. Serve and enjoy!

You can mix it up a little too! Whatever you do, enjoy your stew. Whoah...aren't you glad I don't try to rhyme all the time.
